Grilled Lemon Pepper Chicken Breasts with Thyme Gremolata
1/4 cup fresh lemon juice
1 tablespoon coarsely ground black pepper
Salt
1/2 cup extra-virgin olive oil
3 whole boneless skinless chicken breasts
For gremolata:
1 tablespoon fresh thyme leaves
2 large garlic cloves, minced
1 teaspoon freshly grated lemon zest
Garnish:
Lemon slices
Thyme sprigs
In a bowl whisk together lemon juice, pepper and salt to taste and add oil in a stream, whisking until marinade is emulsified. With a rolling pin or smooth side of a meat pounder flatten chicken 1/4-inch thick between sheets of plastic wrap. In a large resealable plastic bag marinate chicken in marinade, chilled, 30 minutes.
Prepare grill. Make gremolata: In a small bowl stir together gremolata ingredients. Grill chicken on an oiled rack set 5 to 6 inches over glowing coals until just cooked through, about 2 minutes on each side.
Serve chicken sprinkled with gremolata and garnished with lemon and thyme.

OK...here is a SUPER-easy recipe for a fun holiday treat...or this treat will work outside the holidays, too...it is great to take to a shower, etc.
Ingredients: 1 small bag of Rold Gold Tiny Twists pretzels, one bag or several rolls of Rolos, and one bag of pecan halves.
1. Line a cookie sheet with wax paper and preheat the oven to 350 degrees.
2. Lay out the pretzels flat all over the cookie sheet and put one Rolo in the center of each.
3. Pop them in the oven for about 3-5 minutes...just until you can tell the chocolate on the Rolo is starting to melt...make sure that they have not fully melted, you want the Rolo to retain its shape.
4. After you take them out of the oven, push a pecan halve into the center of each Rolo and the Rolo will melt all down into the sides of the pretzels.
5. Let cool on the wax paper for a couple of hours.
This recipe is fun, super-quick, and super-easy! You can make them the night before and just leave them there to cool. Everytime I take this somewhere everyone loves them and wants to know the recipe and when I tell them, they can't believe it is so easy. Plus, they look really cute!
They are the perfect combo of sweet and salty, crunchy and chewy:) ENJOY!!!
