Fun Food for Friday!

Chicken Delight

4-5 Chicken Breast (boiled and cut-up)
8 oz. sour cream
1 can Cream of Celery soup
3-4 Dashes Soy Sauce
1 Stick Butter (melted)
1 Sleeve Ritz Crackers

Layer in Pan:
(1) Chicken
(2) Mix Sour Cream, Soup, and Soy Sauce. Smooth over chicken
(3) Top with crumbled crackers and butter

Bake 350 degrees for 20-30 minutes

Super Nacho Dip

1 pound ground round
1 medium onion, chopped
1/4 teaspoon EACH seasoning salt, cumin, chili powder, garlic powder & pepper
1 can mild green chilis
2-1/2 cups shredded sharp Cheddar cheese
3/4 cup taco sauce
2 cans refried beans
1/2 cup chopped onion
1 cup chopped ripe olives
1 cup sour cream
Parsley

Brown meat with onion and spices; drain off fat.

Spread refried beans in 9x12-inch pan. Top with meat. Sprinkle with chilis, then grated cheese, and taco sauce.

Bake, uncovered, 20 to 25 minutes at 350 degrees F.

Remove from oven; garnish with 1/2 cup chopped onion, 1 cup chopped ripe olives, 1 cup sour cream and parsley.

Serve with taco or corn chips.

Here's a super easy dip that only has four ingredients and tastes REALLY good!

Salsa Dip

1 cup sour cream
1 cup cream cheese (softened)
1 cup shredded cheddar
1 cup salsa

Mix all ingredients together and chill. Serve with tortilla chips, fritos, triscuits, pita chips, veggies, or whatever sounds good!

Kelly - this is such a good idea! I usually pick my recipes from the Saturday morning Food Network shows that I watch while I'm cleaning - this will be a good way to break it up!!

We tried this a couple weeks ago -very good!

Chicken Masala

4 boneless skinless chicken breast halves
1/3 cup all-purpose flour, for dredging
2 tablespoons canola oil
1 onion, chopped
1 teaspoon minced garlic
1 tablespoon garam masala seasoning, plus 2 teaspoons
1 (14.5-ounce) can diced tomatoes, drained
1/2 cup cream of chicken soup, condensed
1 cup light coconut milk
Salt and pepper
1 cup frozen peas
Cooked white rice, to serve


Place chicken breasts and flour in zip-top bag. Shake until chicken is coated with flour. Remove from bag, shaking off excess flour and set aside.

Heat the oil in a frying pan over medium-high heat. When oil is hot, add the chicken breasts and fry until golden brown on both sides. Remove chicken to a plate and set aside.

Add the onion and garlic to the pan and cook until soft. Add the garam masala, tomatoes, soup, coconut milk, and salt and pepper to taste and bring to a boil. Reduce the heat to a simmer and return the chicken breasts to the pan. Simmer for 15 minutes, then add the frozen peas. Return to a simmer and cook for an addition 10 minutes.

Serve hot with white rice.

Cook's Note: Garam masala is a traditional Indian blend of spices and is available in the spice section of the grocery store.

Also - it was good fried like it says, but I think next time we are just going to sear the chicken - skip the flour and oil!

It's very fall-like!
